This month we move to a simpler and more tropical drink to start off 2026. The Parasol is a wonderful tropical drink that is simple to make, since it only has four ingredients. Those ingredients have the flavors of banana, pineapple and lime and this classic is a breeze to make. Sometimes simple is best and when you can mix together rum, lime juice, a banana liqueur and pineapple juice in less than 5 minutes and end up with a cocktail that exudes tropical vibes and transports you away from the winter blahs you can’t go wrong. Enjoy!!!!
Ingredients:

- Bacardi Rum (Pineapple Flavored)
- Banana Liqueur (Crème de Banana)
- Fresh Lime juice
- Pineapple juice
- Pineapple for Garnish
Tools:
- Oxo two-sided shot glass/jigger
- Martini or Coupe Glass (Place in freezer to frost)
- Cocktail Shaker
- Juicer
- Strainer
- Cocktail Pick
Directions:
- Fill cocktail shaker with ice and then add ingredients for one cocktail.
- Bacardi Rum – 2 ½ oz
- Crème de Banana – 1 oz
- Lime Juice – 1oz
- Pineapple Juice – ¾ oz
- Shake very vigorously and strain into a frozen martini or coupe glass.
- Garnish with pineapple chunks on a cocktail pick
