Cinco de Mayo is right around the corner so I thought I would share with you my all-time favorite Margarita recipe (which happens to be a batch recipe) that my friend Chris introduced to me from Cook’s Illustrated that I absolutely love and only slightly modified using agave syrup instead of superfine sugar as the sweetener (both ways are delicious).  Last month I shared my version of a perfect margarita if making a single drink for myself, but this recipe is a little more involved, makes 4-6 drinks per batch and is definitely worth the effort as it is a wonderful cocktail.  The trick to this one is making a sour mix that must sit overnight to build the flavors, but the effort is well rewarded.  In addition, whether serving in a traditional Margarita Glass or my personal favorite, a Cantaritos clay mug (keeps the drink very cold), having a fun glass even kick’s up the fun of a well-made Margarita on a hot day.

Margarita – Batch Recipe (Makes 4-6 drinks)

  1. Prepare you glass by dipping the rim of the glass in some lime juice and dip into kosher salt to coat the rim with salt.  I usually only salt half to allow a area of the glass to drink from that is salt free.  Fill glass with ice prior to filling with cocktail.
  2. Zest lemons and limes to provide 4 tsp of each.
  3. Once zested juice limes and lemons to provide ½ cup of each juice strained.
  4. In mixing vessel make homemade sour mix by adding the following ingredients, cover with plastic wrap and refrigerate overnight:
    • ½ cup lime juice
    • ½ cup lemon juice
    • 1.5 oz agave syrup ( or ¼ cup superfine sugar)
    • 4 tsp of lemon zest
    • 4 tsp of lime zest
    • Pinch of kosher salt
  5. When ready to make cocktails strain the homemade sour mix into drink pitcher and add the following:
    • 1 cup Tequila (e.g., 1800 Silver/Blanco or your favorite)
    • 1 cup Orange liqueur (e.g., Cointreau, Naranja)
  6. Either serve from the cocktail pitcher full of ice and stirred, into glass filled with ice or add the margarita to a cocktail shaker filled with ice shake to get cold and strain into glass filled with ice.
  7. Garnish with lime wedge and enjoy!!!
