The Classic Mojito (as well as Blueberry Mojito shared previously) is a wonderful cocktail during the heat of summer when something refreshing and cold is needed to hit the spot.  The classic mojito is made with white rum, simple syrup, lime juice and mint leaves and mixed with soda.  The mojito is versatile since it can be modified into many different fruit flavors using fresh fruit (not as sweet) or fruit puree (sweeter) as a substitute for the simple syrup.  In the Blueberry Mojito recipe, I shared some time back, I discovered the use of Simply Squeeze Blueberry Puree (made by Real) is an absolutely fabulous substitute of the simple syrup and comes in numerous other flavors (see past post).  This is a quick and easy cocktail to make and only requires rum and a few other ingredients.  I can’t think of a better way to share time with friends in the summer then sharing Classic Mojito’s and hopefully some classic funny stories from our past.  Enjoy!!!!

Ingredients:

  • Bacardi White Rum
  • Mint infused simple syrup
  • Lime
  • Mint Leaves
  • Soda

Directions:

Mint Simple Syrup

  1. Depending on how much you need you just combine equal parts sugar (or turbinado sugar) and water in a saucepan and add five or six mint leaves and bring to a boil in saucepan while stirring.  For example, for small dinner parties I usually mix 1 cup water with 1 cup sugar. 
  2. I then remove from heat to cool.
  3. Once cool strain out the mint leaves and use a strainer and funnel to transfer the mint simple syrup to a squeeze bottle and place in fridge until its needed.

Classic Mojito

  1. Remove enough mint leaves for cocktails being made (6 per drink, plus 1 end of sprig for garnish)
  2. Cut lime slices for cocktails (3 or 4 per drink, plus 1 for garnish)
  3. Then in the cocktail shaker or mixing glass place 3 or 4 limes, 5 or 6 mint leaves and 1 oz of the mint infused simple syrup.
  4. Muddle for 6 or so turns.
  5. Add 3 oz of Bacardi White Rum (two 1 ½  oz shots)
  6. Add ice and shake for 15 seconds
  7. Pour into your cocktail glass everything from the shaker and top with ice and soda water.
  8. Stir gently and finish by garnishing the top of a sprig of mint (with numerous small leaves) and also lime wedge.
