During the hot summer months when the temperatures hover in the eighties and nineties no other classic cocktail is as refreshing as the mojito.  The classic mojito is made with white rum, simple syrup (or sugar), lime juice and mint leaves and mixed with soda.  The mojito is versatile since it can be modified into many different fruit flavors using fresh fruit (not as sweet) or fruit puree (sweeter) as a substitute for the sugar.  In the Blueberry Mojito recipe shared, I discovered the use of Simply Squeeze Blueberry Puree (made by Real) is an absolutely fabulous substitute of the simple syrup and comes in numerous other flavors.  This is a quick and easy cocktail to make and only requires rum and a few other ingredients.  The history of the mojito is quite interesting whether debating its origins or the famous people (Hemingway) that were alleged to be big fans of this cocktail.  However, one thing that cannot be debated is how well the mojito quenches one’s thirst on a hot summer day.

Directions:

  1. Remove enough mint leaves for cocktails being made (6 per drink, plus 1 end of sprig for garnish)
  2. Cut lime slices for cocktails (3 per drink, plus 1 for garnish)
  3. Then in the bottom of the cocktail glass place 3 limes and muddle for 4 turns to release the lime juice and oils from rind.
  4. Then place 6 mint leaves on top of limes and muddle for 4 turns to release mint flavors and oils.
  5. Add 2 oz of Bacardi White Rum (two 1 oz shots)
  6. Add ¾ of an oz of the Blueberry Puree (3/4 of a 1 oz shot)
  7. Add ice
  8. Fill with soda
  9. Stir and then pour the drink from cocktail glass to mixing glass, then back into cocktail glass to mix all the ingredients.
  10. Garnish with the top of a sprig of mint (with numerous small leaves) and also lime wedge.

    I’ll be putting this on the “to do” list for sure! Looks so great. I’ve been using the Real brand coconut cream of coconut for cocktails and I like it, so will have to look for the blueberry. Rum, blueberry, lime, and mint – what’s not to like?
