Every now and then you need the perfect batch drink to make ahead of time for you upcoming party, event or holiday season when you expect more than a handful of guests and you want to focus on entertaining and participating in the gathering and making specific cocktails one by one just won’t do. A batch drink is great to anchor those types of events and limit the one-off drinks you may have to make. One of the best batch drinks to make that is simple and low cost but also appeals to the vast majority of guests is a pineapple infused vodka martini that is known by the name Stoli Doli. This drink was created at the Capital Grill and was given its unique name due to the use of Stolinachya Vodka (hence Stoli) and Dole Pineapple (hence Doli). The hardest aspect of this drink is to plan ahead since you need two weeks for the drink to materialize but believe me it’s worth the wait and while it sits on your counter it’s a fun conversation piece.

  • The first step is to buy you vodka, fresh pineapple and jar/vessel to make the drink.
    • A 1.5 gallon jar filled with pineapple will take approximate 4 pineapples to fill and approximately 3 bottles (750 ml) of vodka (I usually buy one 1.75 L bottle of vodka and one small 750 ml bottle).
    • Pick out your fresh pineapple carefully making sure the bottom is yellow and smells sweet and when you attempt to pick-up pineapple by a single leaf on top the leaf comes out. If you can lift the entire weight of the pineapple with one leaf, put it back and keep searching.
  • Once you done your shopping the the rest is easy except for the wait. Clean up your pineapple by removing the yop and bottom of the pineapple and also removing the skin or rind. Then slice the pinaple in half from top to bottom and the take each half and cut into 1-inch-thick halves.
    • At this point you can just layer the pineapple in the jar as you wish or get fancy and try to create a pattern. Keep in mind the more pineapple the more flavor so make sure you layer in a way that fills up the jar (even use cubes of the pineapple to fill up the voids as you layer).
  • Once you jar is full just fill up with Vodka (make sure your spigot is closed) and cover the pineapple completed (a half an inch above top of pineapple).
  • Seal the jar and place on countertop for 14 days.
  • Once your Stoli Doli is complete for each drink place about 5 oz of the Stoli Doli in a cocktail shaker and shake very vigorously. 
  • Strain drink using cocktail shaker (liquid only – no ice cubes – classic martini style) into frozen martini glass
  • Garnish with pineapple wedge or use two pineapple cubes (if you want add a maraschino or Luxardo cherry for color) on a steel cocktail pick and enjoy.
  • Tips: Save your large empty vodka bottle and after your first servings take the leftover Stoli Doli and place into empty vodka bottle and store in fridge so you and future guests can enjoy for the next week (throw away the pineapple chunks).
