Yes, I admit it, I am a fan of pineapple.  I discovered this drink on a menu at the Tommy Bahama restaurant on one of my first trips to Naples, FL.  Once discovered, my tradition became to always stop at the Tommy Bahama restaurant for happy hour and order a Pineapple Paradisio.  It always signaled the beginning of my weekend escapes to Florida in the winter months when I was working in Michigan, and remined me of being on a tropical island away from all the stresses and cares of the world.  Always a great start to my southern getaways it set the mood for a wonderful trip.  I finally got to a point where I decided why only enjoy this wonderful cocktail at the restaurant when it can also be enjoyed at night with guests sitting on the lanai in Florida or in Michigan when I needed to dream of being in warmer weather.  Thus, I embarked on recreating this wonderful drink and have enjoyed it for many years.  I say slightly modified since I use my own homemade sour and I believe I use a bit more rum than recipes I have found (I don’t actually know the exact restaurant recipe, but believe me, this one hits it spot on).  So the next time you need an escape whether during the summer by the pool or in the winter needing to dream of being in warmer weather this drink can transport you there even if only in spirit. Directions:

  • Make home-made sour mix
  • Ingredients
    • Sugar 1 cup
    • Water 1 cup
    • Lemon 1 cup
    • Lime 1/2 cup
  • In the sauce pan add equal parts of sugar and water and stir and dissolve while bringing to a boil. Once boiling remove from heat and let cool.
  • Squeeze the lime and lemons and set aside the appropriate amount of each juice.
  • Once simple syrup is cool mix together the simple syrup, lemon juice, and lime juice together and the place into plastic squeeze bottle for use. Put in refrigerator to store and before use.
  • Fill cocktail shaker with ice and then add ingredients for one cocktail.
    Bacardi Pineapple Rum – 2 oz
    St Germain Elderflower Liqueur – .5 oz
    Crème de Banana Liqueur – .5 oz
    Pineapple Juice – 1oz
    Home-made Sour Mix – 1 oz
  • Shake cocktail until very cold (10-15 seconds)
  • Strain drink using cocktail shaker (liquid only – no ice cubes – classic martini style) into frozen martini glass
  • Garnish with Orchid ( float on top of drink – see picture)

    This is my favorite drink too at Tommy Bahamas, but I vouch that Bob’s version is much better!! It’s not as sweet (the home made sour mix is key) and Rum flavor comes more through.
